Step-by-Step Instructions
  1. In a medium bowl, add mayo or Greek yogurt, fresh lime juice, chili powder, garlic powder, cumin, paprika, and salt. Mix thoroughly until smooth and creamy.
  2. In a large mixing bowl, combine the cooked shredded chicken, rinsed black beans, and drained corn. Add chopped fresh jalapeños, quartered cherry tomatoes, chopped red onion, and pepitas. Toss gently.
  3. Pour the creamy dressing over the salad ingredients. Gently fold the dressing in to ensure every component is evenly coated.
