- Rinse 2 cups of fresh cranberries, removing any shriveled ones. Finely chop half a red onion and one jalapeño, discard seeds. Chop fresh cilantro.
- In a food processor, combine cranberries, jalapeño, onion, cilantro, ¼ cup sugar, and juice of 1 lime. Pulse until finely chopped for a chunky consistency.
- Taste the salsa and adjust sweetness or acidity by adding sugar or lime juice if desired.
- Transfer to a container and refrigerate for at least 30 minutes for the flavors to meld.
