  • 4 ears Fresh Corn opt for fresh corn on the cob
  • 1 cup Grape Tomatoes halved
  • 1 count English Cucumber diced
  • 0.5 count Red Onion diced
  • 0.75 cup Feta Cheese crumbled
  • 1 handful Fresh Parsley chopped
  • 1 handful Fresh Basil chopped
For the Dressing
  • 0.25 cup Olive Oil
  • 2 tablespoons Red Wine Vinegar
  • 1 tablespoon Lemon Juice
  • 1 tablespoon Honey
  • 1 clove Minced Garlic
  • to taste Salt
  • to taste Black Pepper

Method
 

Corn Salad Preparation
  1. In a medium bowl, whisk together olive oil, red wine vinegar, lemon juice, honey, and minced garlic. Season with salt and black pepper to taste, then refrigerate.
  2. Bring a large pot of water to a boil and cook fresh corn for 2-3 minutes. Transfer to ice water to halt cooking, then cool and drain.
  3. Once cooled, slice kernels off corn cobs. In a large bowl, combine corn, grape tomatoes, cucumber, red onion, feta, parsley, and basil.
  4. Retrieve dressing from refrigerator, whisk, and drizzle over salad. Toss gently to combine, and taste for seasoning adjustments.
