For the Filling

  • 2 cups confectioners sugar
  • 2 tbsp milk adjust for desired filling consistency
  • 1 tbsp food coloring (orange and green) natural food coloring is a great option
  • 1 cup candy eyes mini marshmallows or dark chocolate chips can also be used
  • 1 cup white chocolate chips

Method
 

Baking Steps
  1. Preheat your oven to 355°F (180°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix brown sugar, melted butter, milk, egg, and vanilla extract until smooth.
  4. Gently fold the dry ingredients into the wet ingredients until just combined.
  5. Drop dollops of batter onto the prepared baking sheets, spacing them 2 inches apart.
  6. Bake for 10 minutes, or until they spring back when touched. Cool on a wire rack.
  7. Beat together softened butter, confectioners sugar, vanilla extract, and milk until creamy.
  8. Spread filling on one cooled cookie and sandwich with another cookie. Press gently.
  9. Decorate with candy eyes and white chocolate chips to create fun monster faces.
  10. Let the assembled pies sit for a bit to allow the filling to set before serving.
