Ingredients
  

For the Chickpeas
  • 1 can (15 oz) Cooked Chickpeas drained and rinsed
  • 2 tablespoons Olive Oil can substitute with vegetable oil
  • 1 small Onion finely diced
  • 2 cloves Garlic minced
For the Glaze
  • ¼ cup Soy Sauce or tamari for gluten-free option
  • 2 tablespoons Maple Syrup or agave nectar for a vegan alternative
  • 1 tablespoon Rice Vinegar can substitute with apple cider vinegar
  • 1 tablespoon Toasted Sesame Oil
For the Sauce Thickener
  • 1 tablespoon Cornstarch mixed with 2 tablespoons of water
For the Toppings
  • 2 tablespoons Sesame Seeds optional
  • 2 tablespoons Green Onions sliced
  • Salt to taste
  • Pepper to taste
To Serve
  • 2 cups Cooked Rice or quinoa
  • 2 cups Steamed or Roasted Vegetables seasonal

Method
 

Preparation Steps
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add the finely diced onion and sauté for about 3-4 minutes until it turns translucent.
  3. Incorporate 2 minced garlic cloves into the skillet and cook for an additional 1-2 minutes.
  4. Whisk together ¼ cup of soy sauce, 2 tablespoons of maple syrup, 1 tablespoon of rice vinegar, and 1 tablespoon of toasted sesame oil.
  5. Pour the sauce into the skillet with the sautéed onions and garlic.
  6. Stir the sauce in the skillet for about 1 minute until it melds beautifully.
  7. Mix 1 tablespoon of cornstarch with 2 tablespoons of water to form a slurry and add this to the skillet.
  8. Add in 1 can of drained and rinsed cooked chickpeas, ensuring they are well-coated.
  9. Remove the skillet from heat and sprinkle with sesame seeds and sliced green onions.
  10. Serve the Vegan Sticky Sesame Chickpeas over cooked rice or quinoa with steamed or roasted vegetables.
