- In a medium bowl, combine soy sauce, fish sauce, sugar, and vegetable oil. Whisk until the sugar fully dissolves, creating a smooth marinade.
- Coat the chicken breasts evenly with the marinade, cover, and refrigerate for at least 30 minutes.
- Preheat your grill or skillet over medium-high heat for about 5 minutes. Add the marinated chicken and cook for 6-7 minutes on each side until the internal temperature reaches 165°F.
- While the chicken is cooking, slice the cucumber, and julienne the carrot and daikon radish. Set aside.
- Take the toasted baguette, slice it open, spread mayonnaise, layer the sliced chicken, fresh veggies, cilantro, and jalapeño, then close and serve.
