Ingredients
  

For the Marinade
  • 0.25 cup toasted sesame oil or olive oil
  • 0.25 cup tamari or low sodium soy sauce
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 3 tablespoons honey or maple syrup as vegan alternative
  • 2 pieces jalapeños adjust for spice preference
  • 6 cloves garlic, chopped
  • 1 tablespoon fresh ginger, grated or ground ginger
For the Skewers
  • 1.5 pounds chicken breasts or thighs cut into bite-size chunks
  • 3 cups fresh pineapple chunks canned can be used
  • green onions for garnish
  • basil for garnish
For the Dipping Sauce
  • 0.5 cup mayonnaise
  • 0.33 cup sweet Thai chili sauce
  • 2 tablespoons ketchup omit for lower-sugar option
  • 1 tablespoon tamari or soy sauce
  • 1 piece jalapeño chopped for extra heat
  • 1 clove garlic grated
  • 2 teaspoons lime zest or lemon zest
  • 2 tablespoons toasted sesame seeds

Method
 

Preparation
  1. In a mixing bowl, whisk together the marinade ingredients and coat chicken. Refrigerate for at least 30 minutes, ideally up to 2 days.
  2. Soak wooden skewers in water for about 20 minutes, preheat grill to medium-high, and thread chicken and pineapple onto skewers.
  3. Grill skewers for about 10-12 minutes, turning occasionally until chicken reaches an internal temperature of 165°F.
  4. Simmer reserved marinade in a saucepan until thickened, about 5 minutes.
  5. Combine dipping sauce ingredients and stir until smooth.
  6. Serve skewers warm with reduced marinade and dipping sauce, garnishing with chopped green onions.
