  1. Soak the pineapple rings in a mixture of dark rum and coconut rum for at least 1 hour, then drain and pat dry.
  2. Set up three shallow bowls: one with flour, one with whisked eggs and coconut milk, and one with coconut flakes.
  3. Coat each pineapple ring in flour, dip it in the egg mixture, and roll it in coconut flakes.
  4. Heat vegetable oil to 350°F (175°C) and fry the rings for about 1 minute per side until golden brown.
