Ingredients
  

Peanut Sauce
  • 1/3 cup peanut butter substitute with sunflower seed butter for peanut-free version
  • 2 tablespoons low-sodium soy sauce opt for lower sodium to keep it healthier
  • 1 tablespoon brown sugar or honey replace with agave syrup if needed
  • 2 tablespoons rice wine vinegar apple cider vinegar works well too
  • to taste minced garlic use fresh garlic for an aromatic punch
  • to taste minced ginger fresh ginger is preferred for potency
  • to taste sriracha sauce adjust to taste or omit for milder flavor
Wrap Filling
  • 2 cups cooked chicken use shredded rotisserie chicken for convenience
  • 2 cups coleslaw mix substitute with shredded lettuce for a lighter option
  • 1 unit grated carrot can be omitted for simplicity
  • to taste chopped cilantro feel free to omit if you're not a fan
  • to taste roasted salted peanuts leave out for nut-free wraps
Tortillas
  • 4 units tortillas choose whole grain or gluten-free varieties
  • 4 units lettuce leaves use instead of tortillas for low-carb alternative

Method
 

Prep Steps
  1. In a medium bowl, whisk together peanut butter, low-sodium soy sauce, brown sugar or honey, rice wine vinegar, and minced garlic and ginger to taste.
  2. In a large mixing bowl, combine cooked chicken, coleslaw mix, grated carrot, and chopped cilantro. Drizzle peanut sauce over the mixture, tossing gently.
  3. Warm tortillas in the microwave on a plate covered with a damp paper towel for about 30 seconds.
  4. Spoon an even amount of filling onto each tortilla. Fold in the sides and roll tightly from the bottom up.
  5. Cut each wrap in half diagonally and serve immediately with any remaining peanut sauce.
