Step-by-Step Instructions
  1. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown and cooked through.
  2. Remove the chicken, and in the same skillet, sauté 1 diced onion and 2 minced garlic cloves for 3-4 minutes until fragrant.
  3. Add 1 can of coconut milk, 1 tablespoon of lime juice, 1 teaspoon of smoked paprika, and 1 teaspoon of chili flakes to the skillet, stirring to combine.
  4. Return the chicken to the skillet, lower to a simmer, cover, and cook for 10-15 minutes until the chicken is fully cooked.
  5. Taste the sauce and adjust seasoning with salt, lime juice, or sugar if needed.
