Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Melt a couple of tablespoons of butter and brush one side of each flour tortilla with it.
  3. Mix cinnamon and sugar in a small bowl and sprinkle over the buttered tortillas.
  4. Slice tortillas into triangle shapes and arrange on a parchment-lined baking sheet.
  5. Bake for 8-10 minutes until golden brown and crispy. Allow to cool completely.
  6. Beat softened cream cheese until smooth, then gradually mix in powdered sugar and vanilla extract.
  7. Pour heavy cream into the mixture and beat until fluffy and light.
  8. Chop fresh strawberries and toss them with sugar and lemon juice, let sit for 10-15 minutes.
  9. Layer tortilla chips on a serving platter, add cheesecake filling, and top with strawberries.
  10. Garnish with powdered sugar and serve immediately.
