  • 1/2 cup Raw Honey or maple syrup for vegan
  • 2 large Eggs or flax eggs for vegan
  • 1/2 cup Fresh Orange Juice or lemon juice
  • 1 tablespoon Zest of Oranges or other citrus zests
  • 1 tablespoon Fresh Grated Ginger or ground ginger

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round baking pan.
  2. In a bowl, whisk together the dry ingredients: flour, baking soda, ground ginger, cinnamon, nutmeg, and salt.
  3. In a separate bowl, combine melted butter, raw honey, eggs, orange juice, zest, and grated ginger until smooth.
  4. Fold the dry ingredients into the wet mixture until just combined, avoiding overmixing.
  5. Pour the batter into the prepared pan and bake for 40–45 minutes.
  6. If desired, prepare a glaze by mixing honey and orange juice, then brush over the warm cake.
  7. Allow the cake to cool for about 10 minutes before transferring to a wire rack to cool completely.
