Step-by-Step Instructions
  1. Rinse the shrimp under cold water, pat dry, and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat until shimmering.
  3. Sauté garlic and ginger in the skillet for about 1 minute until fragrant.
  4. Add the seasoned shrimp and cook for 2-3 minutes until pink and opaque.
  5. Stir in the diced pineapple and cook for another 1-2 minutes until warmed through.
  6. Add sweet chili sauce and soy sauce, and simmer for 2-3 minutes until thickened.
  7. Stir in sliced green onions and remove from heat.
  8. Adjust seasoning and serve immediately over rice or in tortillas.
