Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and prepare a 9x9-inch baking pan by lining it with parchment paper.
  2. In a large mixing bowl, combine flour, granulated sugar, brown sugar, baking powder, and salt. Whisk until mixed.
  3. Add the melted butter, egg, and vanilla extract to the dry mixture. Mix until a crumbly dough forms.
  4. Press about two-thirds of the dough firmly into the bottom of the prepared baking pan.
  5. In a separate bowl, combine diced peaches, sugar, cornstarch, lemon juice, and cinnamon. Toss gently to coat.
  6. Spread the peach filling evenly over the pressed crust.
  7. Crumble the remaining dough over the peach filling, allowing some peach to peek through.
  8. Bake for 35-40 minutes until the topping is golden brown.
  9. Let the pan cool completely at room temperature before slicing into squares.
