Preparation
- Preheat your oven to 375°F (190°C) and spray a baking dish with cooking spray.
- Cook sushi rice per package instructions to yield 3 ½ cups. Mix with rice vinegar, sugar, and kosher salt.
- Spread the rice into the baking dish and refrigerate for 30 minutes to firm up.
- Mix Kewpie mayonnaise, cream cheese, soy sauce, sriracha, wasabi, and scallions in a medium bowl.
- Fold in your choice of imitation crab, salmon, or tuna.
- Layer the crab mixture over the chilled rice evenly.
- Bake for 10-12 minutes until heated through and rice is slightly toasted.
- Allow to cool slightly, and top with scallions, avocado, cucumber, and sesame seeds before serving.
