  • 3.5 cups Sushi Rice, cooked Fluffy foundation
  • 1 Tbsp Unseasoned Rice Vinegar Plus 1 1/2 tsp
  • 1 Tbsp Granulated Sugar Balances flavors
  • 1.5 tsp Kosher Salt Elevates flavor
  • 2 Tbsp Canola Oil Keeps rice moist
Creamy Filling
  • 1.5 oz Cream Cheese Adds creaminess
  • 2 Tbsp Kewpie Mayonnaise Authentic umami flavor
  • 2 Tbsp Sriracha Adjust for spice preference
  • 1 Tbsp Reduced-Sodium Soy Sauce For depth of flavor
  • 2 tsp Wasabi Spicy kick, optional
  • 3 Scallions, sliced Divided
  • 1 lb Imitation Crab/Salmon/Tuna Customizable protein

  • 0.25 cup Furikake Japanese seasoning

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and spray a baking dish with cooking spray.
  2. Cook sushi rice per package instructions to yield 3 ½ cups. Mix with rice vinegar, sugar, and kosher salt.
  3. Spread the rice into the baking dish and refrigerate for 30 minutes to firm up.
  4. Mix Kewpie mayonnaise, cream cheese, soy sauce, sriracha, wasabi, and scallions in a medium bowl.
  5. Fold in your choice of imitation crab, salmon, or tuna.
  6. Layer the crab mixture over the chilled rice evenly.
  7. Bake for 10-12 minutes until heated through and rice is slightly toasted.
  8. Allow to cool slightly, and top with scallions, avocado, cucumber, and sesame seeds before serving.

Notes
