Jello Layers
  • 1 box Kiwi Jello Any green jello can be used.
  • 1 box Lemon Jello Lemon curd can be substituted.
  • 1 box Blueberry Jello Any berry-flavored jello will work.

Crust
  • 200 g Digestive Biscuit Graham crackers can be used.
  • 100 g Butter Coconut oil can be used as dairy-free option.
  • 50 g Brown Sugar Granulated sugar could be used.
Filling
  • 5 sheets Gelatin Sheets Agar-agar can be used for vegetarian alternative.
  • 100 g Sugar
  • 200 ml Pineapple Juice Orange juice can provide a refreshing twist.
  • 150 g Sour Cream (35% fat) Greek yogurt works well for lighter option.
  • 250 g Cream Cheese Neufchâtel cheese can be used for lighter option.
  • 200 ml Heavy Cream
  • 30 ml Lemon Juice Using fresh lemon yields the best flavor.

Method
 

Preparation Steps
  1. Prepare the kiwi, lemon, blueberry, and raspberry jello according to the package instructions. Allow each flavor to set in separate molds for at least 4 hours or overnight.
  2. Line a 22 cm springform pan with baking paper. Crush the digestive biscuits and mix with melted butter and brown sugar. Press into the pan base, then refrigerate for 30 minutes.
  3. Soak gelatin sheets in cold water for 5 minutes. Heat pineapple juice and sugar over medium heat, then remove from heat. Squeeze excess water from gelatin and stir into the warm mixture until dissolved. Allow to cool.
  4. In a mixing bowl, combine sour cream, heavy cream, and cream cheese. Whisk until smooth and fluffy. Fold in the cooled gelatin mixture and adjust with fresh lemon juice.
  5. Remove jello from molds and cut into small pieces. Fold jello cubes into the cream filling, then pour over the chilled biscuit base evenly.
  6. Cover cheesecake with plastic wrap and refrigerate for at least 4 hours or overnight for best texture.
  7. Carefully remove from the springform pan. Garnish with fresh fruits or chocolate sauce before serving.
