Step-by-Step Instructions for Sticky Sweet Chili Chicken Thighs
  1. In a medium bowl, combine sweet chili sauce, soy sauce, honey, minced garlic, minced ginger, sesame oil, salt, and pepper. Whisk until well blended.
  2. Place chicken thighs in a large zip-top bag or dish. Pour the marinade over the chicken, ensuring each piece is thoroughly coated. Seal the bag and refrigerate for at least 30 minutes.
  3. Preheat your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper or aluminum foil.
  4. Remove chicken thighs from the fridge. Arrange them skin-side up on the prepared baking sheet.
  5. Bake for 25 to 30 minutes, basting halfway through with leftover marinade. Chicken is ready when skin is crispy and an internal thermometer reads 165°F (74°C).
  6. Remove from the oven and let rest for about 5 minutes. Garnish with chopped scallions before serving.
