  • 1 sachets fast action dried yeast
  • 1 tablespoon caster sugar
  • 500 g strong white bread flour or all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons olive oil or melted butter
  • 100 g baby spinach finely chopped, rinse well
  • 80 g black olives chopped, can swap with green olives
  • 80 g sun-dried tomatoes well-drained
For the Filling and Dip
  • 200 g crumbled feta cheese can substitute with goat cheese
  • 100 g cream cheese or Greek yogurt
  • 2 tablespoons crispy chili oil or regular chili oil

Method
 

Step‑by‑Step Instructions
  1. In a medium bowl, combine warm water, caster sugar, and fast action dried yeast. Stir gently and let sit for about 10 minutes.
  2. Gradually mix in strong white bread flour and salt into the yeast mixture, knead for about 8-10 minutes until smooth and elastic.
  3. Flatten the dough slightly and sprinkle in chopped baby spinach, black olives, and drained sun-dried tomatoes. Fold and knead for another 2-3 minutes.
  4. Place the dough in a lightly oiled bowl, cover it, and let it rise for about 1 hour until doubled in size.
  5. Punch down the dough, shape it into a medusa-like head, create sections for tearing.
  6. Transfer the shaped dough onto a lined baking sheet, cover lightly, and let rest for 30 minutes.
  7. Preheat your oven to 180°C (350°F) and bake the bread for about 25 minutes until golden brown.
  8. While baking, blend together crumbled feta cheese, cream cheese, and crispy chili oil in a food processor until smooth.
