Ingredients
  

For the Guacamole
  • 1 large Lime freshly squeezed juice preferred
  • 2 small Avocados provides creaminess
  • 1 bunch Coriander or fresh parsley as a substitute
For the Salsa
  • 1 cup Sweetcorn fresh corn can be used
  • 200 g Cherry Tomatoes halved
  • 1 medium Red Pepper any bell pepper variety can substitute
  • 2 pieces Spring Onions or regular onion, finely chopped
  • 3 pieces Sundried Tomatoes adds depth of flavor
  • 400 g can Black Beans can substitute with kidney beans or chickpeas
  • 0.5 tsp Cumin
  • 0.5 tsp Coriander
  • 0.5 tsp Smoked Paprika
For the Nachos
  • 4 pieces Wholewheat Tortillas or corn tortillas for gluten-free option
  • 1.5 tsp Oil neutral oil for brushing
For Serving
  • 4 pieces Purple Carrots cut into sticks; regular carrots can be used

Method
 

Step-by-Step Instructions
  1. Make the Guacamole by mashing avocados, mixing in lime juice and coriander, and seasoning with salt.
  2. Prepare the Salsa by combining sweetcorn, cherry tomatoes, red pepper, spring onions, sundried tomatoes, black beans, cumin, coriander, and smoked paprika. Season and chill.
  3. Shape the Nachos by brushing tortillas with oil, cutting them into bat shapes.
  4. Bake Tortilla Shapes in a preheated oven at 200°C (or 180°C fan) for 4-5 minutes until golden.
  5. Serve immediately with carrot sticks, guacamole, and salsa.
