Step-by-Step Instructions
  1. Preheat a non-stick skillet or griddle over medium-low heat for about 3-5 minutes.
  2. Butter one side of each slice of sourdough bread generously to promote a rich, crunchy crust.
  3. Lay the slices of sourdough, butter-side down, in the pan. Layer with mozzarella, basil pesto, optional sun-dried tomatoes or bacon, and cover with more mozzarella and a second slice, pressing down gently.
  4. Butter the top side of the sandwich to promote a beautifully golden crust.
  5. Place the sandwich in the preheated skillet and cook for about 3-4 minutes until the bottom is golden brown.
  6. Flip the sandwich gently and cook the other side for an additional 3-4 minutes until golden brown and cheese is melted.
  7. Remove and let cool slightly for about 1-2 minutes before slicing.
