Preparation Steps
- In a medium saucepan, combine freshly pressed apple cider with cinnamon sticks over medium-high heat. Bring to a rolling boil, then reduce the heat and let it simmer for 8-10 minutes until thickened and fragrant. Remove from heat and let the syrup cool.
- On a heat-proof tray, light one end of a cinnamon stick and a few sage leaves using a kitchen torch. Once they catch fire, extinguish the flames by placing a cocktail glass inverted over the herbs. Allow it to sit for 2-5 minutes to capture the smoke.
- In a cocktail shaker, add fresh blackberries and sage leaves. Muddle together, then add 1-2 tablespoons of cooled apple cider syrup, fresh lemon juice, and a dash of orange bitters. Add bourbon, fill with ice, and shake vigorously for about 15 seconds.
- Remove the smoking glass from the tray and fill it halfway with ice. Strain the muddled mixture into the glass over the ice. Garnish with an additional sage leaf and a charred cinnamon stick.
