Method
 

Preparation Steps
  1. In a medium saucepan, combine freshly pressed apple cider with cinnamon sticks over medium-high heat. Bring to a rolling boil, then reduce the heat and let it simmer for 8-10 minutes until thickened and fragrant. Remove from heat and let the syrup cool.
  2. On a heat-proof tray, light one end of a cinnamon stick and a few sage leaves using a kitchen torch. Once they catch fire, extinguish the flames by placing a cocktail glass inverted over the herbs. Allow it to sit for 2-5 minutes to capture the smoke.
  3. In a cocktail shaker, add fresh blackberries and sage leaves. Muddle together, then add 1-2 tablespoons of cooled apple cider syrup, fresh lemon juice, and a dash of orange bitters. Add bourbon, fill with ice, and shake vigorously for about 15 seconds.
  4. Remove the smoking glass from the tray and fill it halfway with ice. Strain the muddled mixture into the glass over the ice. Garnish with an additional sage leaf and a charred cinnamon stick.
