Method
 

Step-by-Step Instructions
  1. In a small bowl, combine kosher salt, black pepper, chili powder, garlic powder, onion powder, ground cumin, and smoked paprika. Mix well to create a seasoning blend.
  2. Heat 1 tablespoon of extra virgin olive oil in a cast iron skillet over high heat. Add sliced red onion and bell peppers with half of the seasoning. Sauté for about 5 minutes.
  3. Push vegetables to the side. Add the remaining tablespoon of olive oil and the shrimp. Sprinkle remaining seasoning over the shrimp. Sauté for about 3-4 minutes until shrimp are pink and opaque.
  4. Squeeze fresh lime juice over the mixture in the skillet. Stir to coat everything evenly.
  5. Warm tortillas in a separate skillet. Spoon mixture into tortillas and garnish with cilantro. Serve immediately.
