- Preheat your oven to 400℉ (200℃) and prepare a baking sheet with parchment paper.
- Spread cubed sweet potatoes on one side and halved Brussels sprouts on the other side of the sheet. Drizzle with olive oil, toss to coat, and season with salt and pepper.
- Roast the vegetables in the preheated oven for 15 minutes.
- In a mixing bowl, combine the ground beef, 1/4 cup BBQ sauce, garlic powder, onion powder, thyme, salt, and pepper. Mix well and shape into four mini loaves.
- After 15 minutes, stir the vegetables, create space for the mini meatloaves, and place them on the sheet. Brush with remaining BBQ sauce.
- Return to the oven and bake for an additional 12-15 minutes or until the meatloaves reach an internal temperature of 165℉ (74℃).
- Let the meatloaves rest, garnish with parsley if desired, and serve warm.
