Ingredients
  

For the Chicken and Vegetables
  • 4 pieces Chicken Breasts use pre-made rotisserie chicken for a timesaver.
  • 2 tablespoons Olive Oil can substitute with vegetable oil if preferred.
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • 3 cups Mixed Vegetables (bell peppers, onions, zucchini) substitute with seasonal vegetables as desired.
For the Herby Ranch Dressing
  • 1 cup Greek Yogurt replace with sour cream or dairy-free yogurt for alternatives.
  • 1 packet Ranch Seasoning Mix
  • 1/4 cup Fresh Herbs (parsley, dill)
For the Pitas
  • 4 pieces Pitas soft or lightly toasted.

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine chicken breasts with olive oil, salt, pepper, garlic powder, and paprika. Toss to coat.
  3. Chop mixed vegetables into even-sized pieces and add them to the bowl with the chicken. Toss again to coat.
  4. Spread the chicken and vegetables onto a sheet pan in a single layer. Bake for 20-25 minutes, until the chicken reaches 165°F and vegetables are tender.
  5. While baking, mix Greek yogurt, ranch seasoning, and fresh herbs in a small bowl until smooth.
  6. Wrap pitas in aluminum foil and warm them in the oven for the last 5 minutes of baking.
  7. Once cooked, let the chicken rest for 3-5 minutes, then slice and fill warm pitas with chicken, vegetables, and drizzle with dressing.
