Step-by-Step Instructions

  2. Place the bacon strips on the prepared baking sheet and bake for about 12 minutes, flipping halfway through.
  3. In a medium bowl, whisk together the eggs, kosher salt, and ground black pepper until pale and frothy.
  4. Melt 1 tablespoon of butter in a non-stick skillet over medium heat, then pour in the egg mixture and stir gently.
  5. Once the eggs are nearly cooked, remove from heat and fold in the crumbled bacon and cheddar cheese.
  6. Roll out the puff pastry sheet on a floured surface, cutting it into 9 equal squares.
  7. Place a spoonful of the egg mixture in each pastry square, then fold the corners to seal the packet.
  8. Lightly brush the tops of each bundle with egg wash or milk for a sheen.
  9. Bake the bundles for 15-20 minutes until golden brown and flaky.
  10. Let them rest for a few minutes before serving warm.

Notes

Perfectly cooked eggs should be soft and creamy, and using chilled puff pastry helps maintain flakiness.
