Step-by-Step Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place the bacon strips on the prepared baking sheet and bake for about 12 minutes, flipping halfway through.
- In a medium bowl, whisk together the eggs, kosher salt, and ground black pepper until pale and frothy.
- Melt 1 tablespoon of butter in a non-stick skillet over medium heat, then pour in the egg mixture and stir gently.
- Once the eggs are nearly cooked, remove from heat and fold in the crumbled bacon and cheddar cheese.
- Roll out the puff pastry sheet on a floured surface, cutting it into 9 equal squares.
- Place a spoonful of the egg mixture in each pastry square, then fold the corners to seal the packet.
- Lightly brush the tops of each bundle with egg wash or milk for a sheen.
- Bake the bundles for 15-20 minutes until golden brown and flaky.
- Let them rest for a few minutes before serving warm.

Notes
Perfectly cooked eggs should be soft and creamy, and using chilled puff pastry helps maintain flakiness.
