- In a large mixing bowl, combine the ground beef, egg, breadcrumbs, garlic powder, salt, black pepper, and ketchup. Mix thoroughly until just combined, about 2 minutes.
- Shape the beef mixture into 6 to 8 oval patties, approximately 1-inch thick. Arrange in the slow cooker.
- Evenly scatter the sliced onions and mushrooms over the patties in the slow cooker.
- In a separate bowl, whisk together the condensed mushroom soup, beef broth, Worcestershire sauce, and Dijon mustard. Pour over the patties and vegetables.
- Cover and set the slow cooker to LOW for 6 to 8 hours or HIGH for 3 to 4 hours.
- If the gravy appears thin, mix cornstarch with water to create a slurry. Stir into the slow cooker and cook on HIGH for an additional 15 to 20 minutes.
