  1. In a large mixing bowl, combine the ground beef, egg, breadcrumbs, garlic powder, salt, black pepper, and ketchup. Mix thoroughly until just combined, about 2 minutes.
  2. Shape the beef mixture into 6 to 8 oval patties, approximately 1-inch thick. Arrange in the slow cooker.
  3. Evenly scatter the sliced onions and mushrooms over the patties in the slow cooker.
  4. In a separate bowl, whisk together the condensed mushroom soup, beef broth, Worcestershire sauce, and Dijon mustard. Pour over the patties and vegetables.
  5. Cover and set the slow cooker to LOW for 6 to 8 hours or HIGH for 3 to 4 hours.
  6. If the gravy appears thin, mix cornstarch with water to create a slurry. Stir into the slow cooker and cook on HIGH for an additional 15 to 20 minutes.
