Step-by-Step Instructions
  1. Process 1 pound of peeled and deveined shrimp in a food processor until coarsely chopped, resembling a chunky paste.
  2. Transfer the shrimp mixture into a large mixing bowl.
  3. Add ½ cup of breadcrumbs, ¼ cup of freshly chopped cilantro, 2 minced garlic cloves, 1 teaspoon ground cumin, 1 teaspoon paprika, a pinch of salt, and pepper.
  4. Crack in 1 beaten egg and squeeze the juice of 1 lime into the mixture, stirring until fully blended.
  5. Shape the shrimp mixture into patties about 1 inch thick.
  6. Preheat grill or large skillet over medium heat and lightly grease the surface with oil.
  7. Cook the shrimp patties for 4-5 minutes on each side until golden brown and opaque.
  8. Mash 1 ripe avocado with a fork in a separate bowl, then stir in ¼ cup finely chopped red onion, 1 minced jalapeño, a pinch of salt, and the juice of 1 lime.
  9. If desired, toast the burger buns lightly before assembling.
  10. Assemble by placing a shrimp patty on each bun and topping generously with guacamole.
