Step-by-Step Instructions for Scallion Chicken
  1. Combine chicken thighs in a bowl with soy sauce, oyster sauce, black pepper, and corn starch. Mix well and let marinate for 10 minutes.
  2. Heat oil in a non-stick pan over medium heat. Add marinated chicken thighs and sear for 5–6 minutes until golden, then flip and cook another 5–6 minutes until cooked through.
  3. Add the white parts of the scallions to the pan, cooking for 2–3 minutes until softened.
  4. Stir in the green parts of the scallions and sauté for an additional 10–20 seconds.
  5. Adjust seasoning with black pepper, serve warm over rice or noodles.
