Ingredients
  

For the Steak
  • 1 pound Sirloin Steak 1-inch thick for optimal cooking
  • 2 tablespoons Olive Oil For marinade
  • 2 cloves Garlic Minced
  • 2 tablespoons Lemon Juice Fresh
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
For the Base
  • 2 cups Cooked Grains Brown rice, quinoa, or cauliflower rice
For the Veggies
  • 1 cup Cherry Tomatoes Halved
  • 1 cup Cucumber Diced
  • 1 small Red Onion Thinly sliced
  • 1/2 cup Kalamata Olives Pitted
  • 1/4 cup Fresh Herbs Parsley or Dill, chopped
For the Tzatziki
  • 1 cup Greek Yogurt Or coconut yogurt for dairy-free
  • 1/2 cup Grated Cucumber Squeezed dry
  • 1 teaspoon Honey Optional
For the Vinaigrette
  • Vinaigrette Ingredients Whisked separately

Method
 

Marination and Preparation
  1. In a mixing bowl, combine olive oil, minced garlic, lemon juice, dried oregano, thyme, salt, and black pepper to create a marinade. Coat the sirloin steak with the marinade, cover, and let marinate in the refrigerator for at least 30 minutes.
  2. While the steak marinates, mix Greek yogurt with grated cucumber, a pinch of salt, and optional honey in another bowl for tzatziki. Cover and refrigerate for at least 15 minutes.
  3. Whisk together vinaigrette ingredients in another bowl.
Cooking and Assembly
  1. Heat a skillet over medium-high heat and sear the marinated sirloin steak for 4-5 minutes on each side until reaching an internal temperature of 130°F for medium-rare. Remove and let rest for 5 minutes.
  2. Thinly slice the steak against the grain.
  3. In a bowl, layer cooked grains as the base, followed by sliced steak, cherry tomatoes, cucumber, red onion, and Kalamata olives. Sprinkle with fresh herbs.
  4. Finish with a swirl of tzatziki and drizzle of vinaigrette.

Notes
