Step-by-Step Instructions
  1. Cut skinless boneless chicken thighs into bite-sized pieces. In a bowl, combine the chicken with soy sauce, mirin, and sugar. Mix well and marinate for about 5-10 minutes.
  2. Crack two large eggs into a bowl and lightly beat them until just combined. Set aside.
  3. Pour 1/2 cup of chicken stock or dashi into a medium-sized pan over medium heat. Add sliced onion and sauté for about 1 minute.
  4. Add the marinated chicken to the pan and cook for about 1-2 minutes per side until nearly cooked through.
  5. Pour the beaten egg mixture evenly over the cooked chicken in the pan. Cook gently without stirring until the edges start to set.
