  • 2 tablespoons Olive Oil for roasting
  • 1 teaspoon Paprika smoked paprika for a smoky finish
  • 1 teaspoon Garlic Powder
  • 0.5 teaspoon Cinnamon to taste
  • to taste Salt & Pepper essential for flavor
For the Toppings
  • 1 cup Cottage Cheese or Greek yogurt
  • 1 medium Avocado optional but recommended
  • to taste Hot Honey regular honey mixed with chili flakes for spice

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and gather your baking sheet and parchment paper.
  2. In a large mixing bowl, toss diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread on the baking sheet and roast for 40-45 minutes, stirring halfway through.
  3. In a skillet, heat olive oil over medium heat. Sauté diced yellow onion until soft, then add ground beef and taco seasoning, cooking until browned.
  4. Once sweet potatoes are tender, layer them in serving bowls with the beef mixture on top.
  5. Top with cottage cheese and avocado slices, then drizzle hot honey generously over the bowl.
