  1. Begin by bringing a large pot of salted water to a boil. Blanch fresh green beans for about 3-4 minutes, then transfer to an ice water bath to cool.
  2. In a large skillet, melt 2 tablespoons of unsalted butter and 1 tablespoon of olive oil over medium heat. Sauté 1 cup of chopped shallots and 2 cloves of minced garlic until translucent.
  3. Add 8 ounces of sliced mushrooms and cook until browned. Stir in 2 tablespoons of flour and gradually whisk in 1 cup of heavy cream; let simmer until thickened.
