- Pat the sirloin or ribeye steak dry with paper towels and cut into bite-sized cubes. Season generously with salt and pepper.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add seasoned steak in a single layer, sear for 2-3 minutes until browned, then remove and set aside.
- In the same skillet, reduce heat to medium, add 3 tablespoons of unsalted butter, and minced garlic. Sauté for 30 seconds until fragrant, then return the steak to the skillet, tossing to coat.
- In a separate saucepan, melt 1 tablespoon of unsalted butter, sauté 1 minced garlic clove for 30 seconds, then pour in 1 cup of heavy cream, whisking frequently for 2-3 minutes. Stir in ½ cup of Parmesan until smooth.
- Plate the steak bites, drizzle or serve the Parmesan sauce on the side, and garnish with parsley and red pepper flakes.
