- In a large bowl, whisk together melted unsalted butter, minced garlic, smoked paprika, chili powder, ground cumin, dried oregano, cayenne pepper, salt, black pepper, and lemon juice.
- Add the boneless, skinless chicken thighs to the marinade, tossing to coat each piece thoroughly and refrigerate for at least 1 hour.
- Preheat your grill to medium-high heat, around 400°F (200°C).
- Thread the marinated chicken thighs onto skewers, leaving some space between each piece.
- Place the skewers on the grill and cook for 4-5 minutes per side until the chicken reaches an internal temperature of 165°F (74°C).
- Optionally, brush the skewers with any remaining melted butter or marinade once cooked.
- Remove the skewers from the grill, allow to rest for a few minutes, and garnish with chopped parsley.
