Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease the baking dish lightly with olive oil.
  2. In a large mixing bowl, combine chicken, zucchini, cherry tomatoes, red onion, and garlic. Drizzle with olive oil and seasonings, and toss until coated.
  3. Transfer the mixture into the greased baking dish, spreading it evenly.
  4. Sprinkle mozzarella and parmesan cheese on top of the mixture.
  5. Cover with aluminum foil and bake for 20 minutes.
  6. Remove foil and bake for an additional 10-15 minutes until the cheese is golden brown.
  7. Let cool for a few minutes, then garnish with parsley before serving.
