Step-by-Step Instructions for Chicken Yakitori
  1. Prepare Tare Sauce by combining soy sauce, mirin, sake, and sugar in a saucepan. Simmer until thickened.
  2. Prepare the Chicken by cutting thighs into bite-sized pieces and threading onto soaked bamboo skewers.
  3. Preheat the Grill to high heat, about 400°F (200°C).
  4. Grill the Skewers for 8-10 minutes, turning occasionally for an even char.
  5. Baste with Tare sauce during the last few minutes of grilling for caramelization.
  6. Check for Doneness with a meat thermometer; it should read at least 165°F (74°C).
