Step‑by‑Step Instructions
  1. In a mixing bowl, combine diced boneless chicken with soy sauce, sesame oil, cornstarch, and a pinch of salt. Marinate for at least 15 minutes.
  2. In a separate bowl, whisk together remaining soy sauce, oyster sauce, hoisin sauce, dark soy sauce, and coarse black pepper. Set aside.
  3. Heat vegetable oil in a large pan or wok over medium-high heat. Add marinated chicken and cook for 5-7 minutes until golden brown.
  4. In the same pan, add garlic, ginger, and red chili if using. Stir-fry for about 30 seconds until fragrant.
  5. Add sliced mushrooms and stir-fry for 4-5 minutes until tender.
  6. Return the cooked chicken to the pan. Pour in the sauce and cook for 2-3 minutes until thickened.
