Ingredients
  

Beef Marinade
  • 1 pound beef flank steak or skirt steak; substitute chicken or tofu if desired
  • 1 teaspoon baking soda tenderizes the beef
  • 2 tablespoons light soy sauce gluten-free soy sauce can be used
  • 1 tablespoon peanut oil or vegetable oil for a neutral taste
  • 1 tablespoon cornstarch thickens the sauce and tenderizes the meat
Sauce
  • 1 cup chicken broth vegetable broth can be used for vegetarian option
  • 3 tablespoons oyster sauce use gluten-free oyster sauce if needed
  • 1 tablespoon dark soy sauce more light soy sauce can be used if dark is unavailable
  • 1 teaspoon sugar reduce or swap with sugar alternative if desired
  • 1 teaspoon sesame oil optional but recommended
Stir-Fry
  • 1 medium white onion yellow onion or shallots can be used
  • 3 cloves garlic fresh garlic is preferred
  • 1 teaspoon ginger fresh ginger is best but powdered works too
  • 1 bunch asparagus or bell pepper; substitute seasonal veggies as desired

Method
 

Cooking Steps
  1. In a large bowl, combine thinly sliced beef flank steak with baking soda, light soy sauce, peanut oil, and cornstarch. Mix well, ensuring each piece is evenly coated. Let the beef marinate for at least 15 minutes.
  2. In a small bowl, whisk together chicken broth, oyster sauce, dark soy sauce, sugar, cornstarch, and sesame oil until well combined. Set the sauce mixture aside.
  3. Heat 1 tablespoon of peanut oil in a large skillet or wok over medium-high heat. Add the marinated beef in a single layer, cooking for about 1 minute until golden brown on one side. Flip the beef and cook for another minute until just done. Remove beef and keep warm.
  4. In the same skillet, add the remaining tablespoon of oil. Add sliced onion, minced garlic, and grated ginger, stirring for about 2 minutes until fragrant. Add asparagus or your choice of vegetables, stir-frying until bright and just tender, about 1 minute.
  5. Stir the sauce mixture and pour it into the skillet. Cook for another minute until the sauce thickens and coats the vegetables. Return the cooked beef, tossing everything together.
  6. Plate the Beef with Oyster Sauce, garnish with sesame seeds if desired, and serve hot over steamed rice.
