Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 200°C (390°F).
  2. Wash and cube the large baking potatoes into bite-sized pieces. Par-boil them for about 6-10 minutes.
  3. Transfer the steamed potatoes into a large baking dish. Drizzle with olive oil and sprinkle with thyme, oregano, salt, black pepper, and chilli flakes.
  4. Place the seasoned potatoes in the preheated oven and roast for 30-40 minutes, shaking occasionally.
  5. Remove the potatoes from the oven, create a well in the center, and add feta cheese and half of the lemon juice.
  6. Wrap the head of garlic in foil and roast it for about 15 minutes until soft.
  7. Squeeze the roasted garlic out of its skins and mash it.
  8. Return the dish to the oven for an additional 15 minutes. Mix in the mashed garlic, remaining lemon juice, and chopped basil.
  9. Drizzle with honey and sprinkle with fresh basil before serving.
