- Preheat your oven to 200°C (390°F).
- Wash and cube the large baking potatoes into bite-sized pieces. Par-boil them for about 6-10 minutes.
- Transfer the steamed potatoes into a large baking dish. Drizzle with olive oil and sprinkle with thyme, oregano, salt, black pepper, and chilli flakes.
- Place the seasoned potatoes in the preheated oven and roast for 30-40 minutes, shaking occasionally.
- Remove the potatoes from the oven, create a well in the center, and add feta cheese and half of the lemon juice.
- Wrap the head of garlic in foil and roast it for about 15 minutes until soft.
- Squeeze the roasted garlic out of its skins and mash it.
- Return the dish to the oven for an additional 15 minutes. Mix in the mashed garlic, remaining lemon juice, and chopped basil.
- Drizzle with honey and sprinkle with fresh basil before serving.
