Marinating and Cooking
- In a medium bowl, combine lime juice, cumin, paprika, salt, and pepper to create a marinade. Add the chicken and marinate for at least 30 minutes.
- Heat olive oil in a skillet. Add marinated chicken and cook until golden brown and cooked through, about 6-7 minutes per side. Let it rest before slicing.
Sautéing and Assembling
- In the same skillet, sauté fresh corn for about 5 minutes until slightly charred. Season with salt and pepper.
- Assemble the bowls by adding rice, sliced chicken, and sautéed corn. Drizzle with lime juice and top with cilantro.
- Add avocado and jalapeños as desired before serving.
