Method
 

Marinating and Cooking
  1. In a medium bowl, combine lime juice, cumin, paprika, salt, and pepper to create a marinade. Add the chicken and marinate for at least 30 minutes.
  2. Heat olive oil in a skillet. Add marinated chicken and cook until golden brown and cooked through, about 6-7 minutes per side. Let it rest before slicing.
Sautéing and Assembling
  1. In the same skillet, sauté fresh corn for about 5 minutes until slightly charred. Season with salt and pepper.
  2. Assemble the bowls by adding rice, sliced chicken, and sautéed corn. Drizzle with lime juice and top with cilantro.
  3. Add avocado and jalapeños as desired before serving.
