Method
 

Directions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, whisk together olive oil, lemon juice, Dijon mustard, dried oregano, dried thyme, red pepper flakes, smoked paprika, salt, and black pepper.
  3. Add the chicken thighs, red bell pepper strips, sliced yellow onion, and Kalamata olives into the bowl with the marinade. Toss everything together thoroughly until all pieces are evenly coated.
  4. Generously grease a large baking dish with olive oil. Pour the marinated chicken and vegetable mixture into the dish, spreading it out evenly.
  5. Place the baking dish in your preheated oven and bake for 25-35 minutes until the chicken is done.
  6. Remove the dish from the oven and sprinkle crumbled feta cheese over the top. Return to the oven for an additional 5 minutes.
  7. Let the Mediterranean Chicken Bake rest for about 5 minutes before serving, garnished with freshly chopped parsley.
