- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, whisk together olive oil, lemon juice, Dijon mustard, dried oregano, dried thyme, red pepper flakes, smoked paprika, salt, and black pepper.
- Add the chicken thighs, red bell pepper strips, sliced yellow onion, and Kalamata olives into the bowl with the marinade. Toss everything together thoroughly until all pieces are evenly coated.
- Generously grease a large baking dish with olive oil. Pour the marinated chicken and vegetable mixture into the dish, spreading it out evenly.
- Place the baking dish in your preheated oven and bake for 25-35 minutes until the chicken is done.
- Remove the dish from the oven and sprinkle crumbled feta cheese over the top. Return to the oven for an additional 5 minutes.
- Let the Mediterranean Chicken Bake rest for about 5 minutes before serving, garnished with freshly chopped parsley.
