Preparation
- In a mixing bowl, whisk together ½ cup of olive oil, 4 minced garlic cloves, juice from 2 lemons, 2 tablespoons of paprika, 1 tablespoon of dried oregano, and 1 tablespoon of chili flakes. Season with salt and pepper to taste.
- Place your whole chicken or boneless chicken thighs into a resealable bag or a large bowl. Pour the prepared marinade over the chicken, ensuring it's evenly coated. Seal the bag tightly or cover the bowl, and marinate in the refrigerator for at least 2 hours, or overnight.
- Preheat your grill or oven to medium-high heat, around 400°F (200°C). Oil the grates lightly to prevent sticking.
- Remove the chicken from the marinade and place it on the grill or baking tray. Cook for about 45-60 minutes on the grill, or 40-50 minutes in the oven, flipping halfway through.
- Once cooked, remove the chicken from the grill or oven and let it rest for about 10 minutes before serving.
