Step-by-Step Instructions
  1. Begin by preparing the marinade for the chicken. In a mixing bowl, combine olive oil, fresh lemon juice, minced garlic, dried oregano, paprika, and a pinch of salt and black pepper. Add the boneless, skinless chicken and ensure it's fully coated. Cover and refrigerate for at least 30 minutes.
  2. While the chicken is marinating, prepare the creamy feta tzatziki. In a separate bowl, mix Greek yogurt, crumbled feta cheese, grated cucumber, lemon juice, minced garlic, and a drizzle of olive oil. Stir in chopped fresh dill or mint, along with salt and pepper. Cover and refrigerate for at least 1 hour.
  3. Preheat your grill to medium-high heat (about 400°F). Remove the chicken from the marinade and grill each piece for 6-7 minutes per side, or until the internal temperature reaches 165°F.
  4. Once cooked, let the chicken rest a few minutes before slicing into thin strips. Warm your pita in a skillet or oven for a few seconds until soft.
  5. Layer the grilled chicken onto the warmed pita, top with cherry tomatoes, sliced red onion, shredded lettuce or baby spinach, and cucumber. Generously drizzle with the creamy feta tzatziki and wrap it up.
