  • 1 tbsp Smoked Paprika or regular paprika
  • 1 tsp Garlic Powder or fresh garlic
  • 2 cloves Garlic (minced)
For the Topping
  • 1 cup Low-Fat Mozzarella Cheese or dairy-free alternatives
  • 1/2 cup Parmesan Cheese (grated) or nutritional yeast
  • 1/4 cup Fresh Parsley or Basil optional

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F and grease a 9x9-inch baking dish with olive oil.
  2. Combine dried oregano, smoked paprika, garlic powder, salt, and pepper in a bowl and season the chicken.
  3. Sear the seasoned chicken in a skillet with olive oil over medium-high heat for 3-4 minutes on each side.
  4. Sauté chopped onion in the same skillet for about 3 minutes, then add minced garlic for 30 seconds.
  5. Whisk together eggs and Greek yogurt, season, and combine with the chicken mixture.
  6. Layer half of the zucchini, chicken mix, yogurt-egg mixture, and cheeses in the baking dish, then repeat the layers.
  7. Cover with foil and bake for 20 minutes, then uncover and bake for an additional 10-15 minutes until golden.
  8. Let it rest for 5 minutes before serving, garnished with parsley or basil if desired.
