Step-by-Step Instructions for Roasted Plantains
  1. Preheat your oven to 425°F (218°C) and line a baking sheet with parchment paper.
  2. Trim both ends of the ripe plantains. Make a shallow cut lengthwise through the peel and remove it.
  3. Slice the peeled plantains into 1/4-inch thick pieces at a slight angle.
  4. Arrange the plantain slices on the baking sheet. Drizzle with melted coconut oil and sprinkle with sea salt.
  5. Bake for 10 minutes, then flip each slice and bake for an additional 5-10 minutes until golden brown.
  6. Allow to cool for a minute before serving. Optionally serve with a sauce for extra flavor.
