Step-by-Step Instructions for Roasted Plantains
- Preheat your oven to 425°F (218°C) and line a baking sheet with parchment paper.
- Trim both ends of the ripe plantains. Make a shallow cut lengthwise through the peel and remove it.
- Slice the peeled plantains into 1/4-inch thick pieces at a slight angle.
- Arrange the plantain slices on the baking sheet. Drizzle with melted coconut oil and sprinkle with sea salt.
- Bake for 10 minutes, then flip each slice and bake for an additional 5-10 minutes until golden brown.
- Allow to cool for a minute before serving. Optionally serve with a sauce for extra flavor.

Notes
Fresh roasted plantains taste best. Store leftovers in the fridge for 1-2 days and reheat in the oven to maintain texture.
