Step-by-Step Instructions
  1. Preheat the oven to 425°F (220°C). Trim and peel the carrots, then toss them with salt, pepper, and smoky paprika in a mixing bowl.
  2. Arrange the carrots on a baking sheet in a single layer and roast for 25-30 minutes, stirring halfway until tender and caramelized.
  3. While roasting, blend ricotta, lemon juice, and a pinch of salt until smooth and creamy in a blender or food processor.
  4. In a small saucepan, gently heat the honey and stir in chili flakes, then add vinegar when warm and mix until combined.
  5. Once roasted, let the carrots cool slightly, then serve topped with whipped ricotta and a drizzle of hot honey.
