Preparation Steps
  1. Begin by coarsely chopping the ripe red tomatoes, sweet watermelon, juicy strawberries, red jalapeño, and fresh garlic cloves.
  2. In a high-powered blender, combine the prepped tomatoes, watermelon, strawberries, jalapeño, and garlic. Blend on high for about 1-2 minutes until the mixture becomes a smooth purée.
  3. With the blender still running, gradually drizzle in the extra virgin olive oil over approximately 2-3 minutes.
  4. Once blended, taste the gazpacho and adjust the seasoning to your liking with kosher salt, pink peppercorns, lime juice, or red wine vinegar.
  5. Transfer the gazpacho to a large bowl or airtight container, cover, and refrigerate for at least 2 hours.
