Ingredients
  

For the Chicken
  • 8 pieces Breaded Chicken Tenders
  • 1/4 cup Honey adjust for personal preference
  • 1/4 cup Avocado Oil can be swapped for any neutral oil
For the Spices
  • 1/4 teaspoon Ground Ginger
  • 1/4 teaspoon Garlic Powder
  • 1/4 teaspoon Cayenne Powder optional
  • 2 teaspoons Chili Powder
  • 1/2 teaspoon Salt and pepper to taste
For the Salad Base
  • 2 stalks Romaine Lettuce chopped
  • 1/2 Red Onion diced
  • 1 Avocado diced
  • 2 stalks Green Onions diced
  • 1 handful Cilantro chopped
  • 1/2 cup Shredded Carrots about 6 baby carrots
  • 1/4 Jalapeno finely chopped and deseeded
For the Dressing
  • 1/2 Lime Juice juice from half a lime
  • 1/3 cup Cilantro Lime Dressing or similar creamy dressing

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) or set your air fryer to 375°F (190°C). Arrange 8 breaded chicken tenders on a baking sheet or in the air fryer basket. Bake or air fry for about 15-20 minutes, flipping halfway through, until golden brown and crispy.
  2. While the chicken is cooking, prepare the fresh vegetables: chop the romaine lettuce, dice the red onion, slice the avocado, and dice the green onions, cilantro, and shred the carrots. Combine in a large bowl.
  3. In a medium bowl, mix together honey, avocado oil, ground ginger, garlic powder, cayenne powder, chili powder, and salt. Whisk until smooth. Toss cooked chicken in the honey sauce until coated.
  4. Add the sauced chicken to the large bowl with the vegetables. Drizzle with cilantro lime dressing and lime juice then toss together to combine.
