For the Pineapple Salsa
  • 1 cup Pineapple Fresh is best, canned can be used.
  • 1/2 cup Red Onion Swap with green onion for a milder taste.
  • 1/4 cup Cilantro Can be omitted for parsley.
For Assembling the Tacos
  • 8 pieces Tortillas Corn or flour tortillas can be used.
  • 1 optional Jalapeños Optional topping for heat.
  • 1 optional Avocado Optional topping for creaminess.

Method
 

Marination and Cooking
  1. Combine chili powder, cumin, paprika, lime juice, and salt in a bowl. Coat the chicken thighs and let sit for at least 15 minutes to marinate.
  2. Heat a skillet over medium heat with a drizzle of oil. Add the marinated chicken and cook for 7-10 minutes on each side until golden brown and cooked through.
  3. Remove chicken from skillet, let rest for a few minutes, then slice into strips.
  4. Warm the tortillas in a separate pan for about 30 seconds on each side until soft.
  5. Assemble tacos by placing sliced chicken in tortillas and topping with pineapple salsa and optional toppings.
