Step‑by‑Step Instructions
  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Place chicken breast-side down on a cutting board. Cut along both sides of the backbone to remove it.
  3. Open the chicken and score the sternum. Season the inside with salt and pepper, then flatten the chicken.
  4. Mix softened butter, olive oil, parsley, garlic, lemon zest, lemon juice, salt, and pepper in a bowl.
  5. Spread the butter mixture under the skin, then brush the outside with the remaining mix.
